Strawberry Daiquiri

I initially set out to make a strawberry banana smoothie with flax seed and protein powder. I prepared all the ingredients and popped everything in the blender. Flipped the switch and NOTHING happened! Is it the plug I thought????? No, my blender has died! After working out at the gym, treadmill 45 minutes and several different strength training exercises, I thought what a wonderful treat, a nice cold smoothie. Well needless to say that didn’t happen. Truth be told I know my husband broke the blender, cleaned it up and placed it neatly back in the corner. Oh, I often times come across well cleaned, nicely situated kitchen tools that my curious family gets a hold on. But the blender is my husband’s favorite NEW now broken toy. Oh well, I decided what else better to do with half frozen strawberries. No blender to crush ice, but I do have an emerging blender. I can at least puree the berries. So here it is. My Strawberry Daiquiri, pureed, shaken and served!

Serves 2 or 4 (just depends on your state of mind)

16 ounces fresh or frozen strawberries pureed

4 ounces Rum (more if your husband broke your blender)

1 tablespoon powdered sugar

1 tablespoon freshly squeezed lemon juice

Ice

Fresh Strawberries for garnish

Puree strawberries until smooth, pour puree through a medium sized strainer to remove excess seeds. Add powdered sugar, lemon juice and Rum into a pitcher, stir. At this point you can add more Rum if your heart desires or just add a shoot into your glass before serving like I did. Add ice to a shaker, pour in mixture and shake. Serve in a glass garnished with a strawberry. Oh , I popped the glass in the freezer and chilled them before pouring the daiquiri. It keeps the drink colder longer, if it last that long! Enjoy.
