Creamed Spinach

Delicious and full of Iron, just what the doctor ordered! I’ve known for years that I have low iron and need to take supplements. But me being the bull headed person I am,  I didn’t want to surrender to pills. The doctor basically said if I didn’t get the deficiency under control I may need a blood transfusion. SOOOOOO…. I’ve started eating foods higher in Iron. I’ve realized that healthy does not mean tasteless!  Adding a little spice adds a ton of flavor to many dishes. Just open up open your mind and taste buds! Food doesn’t need tons of salt to taste better. Some warm spices and fresh herbs go a long way.

Fresh spinach instead of frozen, limits the steps of defrosting and squeezing out the water.

A quick saute and you are almost there.

Don’t burn the cream, it will only make the dish bitter. Here’s the recipe.
BTW~ I need a lot more recipes high in Iron, please give me some ideas. Thanks!

    Swiss Chard has a ton of iron and can be cooked many different ways, in a omelet, baked as chips, sauteed, added to canelloni or raviolis, it is a very hearty green that holds up to just about anything, I often add it to soups and it is wonderful.
